INGREDIENTS
- 1kg Mussels
- 2 Cloves Garlic
- Parsley Bunch
- Olive Oil
- White Wine
- 300-500g Fresh Tomatoes
- Dried Chili Flakes
- Salt & pepper
METHOD
- Sauté 1 clove of garlic & parsley in olive oil for 2-3 mins, once fragrant add the mussels and pour a good glug of white wine.
- Cover and let the mussels steam until they open from their shells.
- Remove the mussels once cooked.
- In a separate pan sauté the remaining garlic clove with the chili flakes, add the tomatoes and reduce until a thick saucy texture is achieved.
- Add the mussels back into the pan alongside their cooking juices, serve in a dish garnished with fresh parsley
- Toasted focaccia is the authentic recommended accompaniment for this dish.
